Ingredients:
-1 package of Gnocchi Gnocchi Mix, prepared according to package instructions
-1 cup of basil pesto (recipe below)
-1/4 cup of grated Parmesan cheese
-1 tablespoon of olive oil
-Salt and pepper to taste
Basil Pesto Recipe:
-2 cups of fresh basil leaves
-1/2 cup of grated Parmesan cheese
-1/2 cup of extra-virgin olive oil
-1/3 cup of pine nuts
-3 garlic cloves, peeled
-Salt and pepper to taste
Instructions for Basil Pesto:
- In a food processor, pulse together the basil, Parmesan cheese, pine nuts, and garlic until coarsely chopped.
- With the food processor running, slowly pour in the olive oil until the pesto is smooth and creamy.
- Season with salt and pepper to taste.
Instructions for Basil Pesto Gnocchi:
- Boil the gnocchi according to package instructions until they float to the surface, about 2 minutes. Drain and set aside.
- In a large saucepan, heat the olive oil over medium heat.
- Add the prepared gnocchi to the pan and cook for 1-2 minutes, stirring occasionally.
- Remove the gnocchi from the heat and add the basil pesto, stirring to coat the gnocchi evenly.
- Sprinkle the grated Parmesan cheese over the top of the gnocchi and pesto mixture.
- Season with salt and pepper to taste.
- Serve immediately and enjoy!
