"Gnocchi Basil Pesto and Parmesan"

Serve size: 3/4 ppl

-1 package of Gnocchi Gnocchi Mix, prepared according to package instructions
-1 cup of basil pesto (recipe below)
-1/4 cup of grated Parmesan cheese
-1 tablespoon of olive oil
-Salt and pepper to taste

Basil Pesto Recipe:
-2 cups of fresh basil leaves
-1/2 cup of grated Parmesan cheese
-1/2 cup of extra-virgin olive oil
-1/3 cup of pine nuts
-3 garlic cloves, peeled
-Salt and pepper to taste

Instructions for Basil Pesto:

  1. In a food processor, pulse together the basil, Parmesan cheese, pine nuts, and garlic until coarsely chopped.
  2. With the food processor running, slowly pour in the olive oil until the pesto is smooth and creamy.
  3. Season with salt and pepper to taste.

Instructions for Basil Pesto Gnocchi:

  1. Boil the gnocchi according to package instructions until they float to the surface, about 2 minutes. Drain and set aside.
  2. In a large saucepan, heat the olive oil over medium heat.
  3. Add the prepared gnocchi to the pan and cook for 1-2 minutes, stirring occasionally.
  4. Remove the gnocchi from the heat and add the basil pesto, stirring to coat the gnocchi evenly.
  5. Sprinkle the grated Parmesan cheese over the top of the gnocchi and pesto mixture.
  6. Season with salt and pepper to taste.
  7. Serve immediately and enjoy!
