Ingredients:
- 1 package of instant gnocchi mix
- 1 pound ground lamb
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1/4 cup balsamic vinegar
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley or basil, chopped (optional, for garnish)
Instructions:
- Prepare the instant gnocchi according to the package instructions.
- In a large skillet over medium heat, add the olive oil and onion. Cook until the onion is soft and translucent, about 5 minutes.
- Add the ground lamb and cook until browned, breaking it up into small pieces as it cooks.
- Add the garlic and cook for 1-2 minutes, until fragrant.
- Add the diced tomatoes, balsamic vinegar, tomato paste, oregano, basil, salt, and pepper. Stir to combine.
- Simmer the sauce for 10-15 minutes, stirring occasionally, until it has thickened and the flavors have melded together.
- Serve the gnocchi with the balsamic lamb ragu on top. Garnish with fresh parsley or basil, if desired.
